These are great. And I’m PANTS at making pancakes! I think I’ll make them tomorrow actually (perfect for a weekend brunch). I’ve tried various types of low-carb ‘protein’ pancakes before, but I’ve never been too keen (always find that flavoured protein powder has a bit too much of a ‘fake’ taste for me in the pancakes). But these are really good, and my boyfriend even liked them, which says alot.
- 2 eggs
- 2 oz cream cheese
- toppings – whatever you like – I usually go for powdered sweetener with some lemon juice, but sugar-free syrups or fruit or ANYTHING will work!
Mix up the eggs and cream cheese to make a batter – this is best in a blender/using a handheld stick blender, or something like a Nutribullet.
Pour a bit (depending on how big you want your pancakes) of the batter into a heated and greased pan, and cook as you would a usual pancake – leave for a minute or so, and flip onto the other side until golden brown.
Enjoy with ya favourite toppings.
